The Best Bubble and Squeak I’ve ever eaten

If I was a radio DJ I’d have to give a shout out to my friend JuJu at this point; partly because she’s awesome, but mainly out of guilt, because she asked me to send her this recipe well over a month ago.  You know how it is though; you fill your life doing…well, not very much at all.

So here it is; what I think is the best Bubble & Squeak EVER!  Well, probably, anyway.  Maybe with a pint of Carlsberg it would be…

Oh, and it’s super easy too.  And you can make loads of them and freeze them (but make sure you defrost them thoroughly before you cook them – I once gave myself food poisoning when it was still a bit cold in the middle.  Oops!)

Makes six bubble and squeak cakes.  They are quite substantial so you can serve one per person, or two if you’re little piggies…

1 tablespoon Olive Oil
1 Red Onion, thinly sliced
4 rashers of free-range Streaky Bacon, cut into small pieces
550g mashed Potato – leftovers will do just fine (after all, that is the point of B&S)
300g cooked Brussel Sprouts/Cabbage/Greens/Kale/Chard/Carrots/Parsnips – whatever you’ve got lying about, chopped
25g grated Parmesan or Grana Padano cheese
Freshly grated Salt and Black Pepper
A little bit of melted Butter


1. Heat the oil in a large pan and cook the onion for 4-5 minutes, until soft.  Add the streaky bacon and cook for a further 3-4 minutes until it begins to brown.  Remove the pan from the heat and transfer the onions and bacon to a large bowl.

2. Add the mashed potato and vegetables and season well with salt and pepper.  Then add the cheese, mix well and divide the mixture into six portions.  Using your hands, shape each portion into a patty.

3. At this point freeze if you are going to.  If not, pop the patties onto a greased baking tray and brush each one liberally with a little melted butter.

4. Bake at 200°C/(180°C fan oven)/Gas mark 6 for 25 minutes until golden.

Try it and let me know it you agree at how tasty they are…
